Ingredients

  • 1/2 head Romaine Lettuce
  • 1/2 onion, thinly sliced
  • 1 clove garlic
  • 1 can Mandarin Oranges - chilled
  • 1/3 C Parmesean Cheese(or crumbled feta)
  • 1/4 C Slivered Almonds
  • 4 Slices Bacon - cooked & crumbled
  • Reserve bacon drippings
  • 3 Tbsp Red wine or Balsamic Vinegar
  • juice of 1/2 lemon
  • 1 tsp honey
  • 2 Tbsp granulated Sugar
  • 1 Egg - whipped

Preparation

Step 1

Cut bacon into bite sized bits & brown.
Drain & reserve drippings.
Wash lettuce and drain; tear into bite size portions & place in large salad bowl.
In same pan as bacon, saute onion with garlic.
Place hot onions on salad greens, and top with bacon and almonds.
In small sauce pan, mix together sugar, vinegar, honey, lemon juice, bacon drippings, salt & pepper to taste.
Temper egg into dressing, whisk.
Heat sauce over medium heat, whisking continually, until sauce begins to thicken.
When heated, but not boiling, drizzle over lettuce and toss to coat.
Top with mandarin oranges,cheese and slivered almonds.
Serve immediately.
