Pumpkin Soup - simple

This is the easiest pumpkin soup you will ever make. It tastes like you spent HOURS in the kitchen.

Ingredients

  • 1/2 Stick of butter
  • 1 Cup finely chopped onion
  • 1 Clove garlic, minced
  • 6 Cups Chicken Stock
  • 1 1/2 tsp. Salt
  • 1 tsp. pepper
  • 1 Large can pumpkin pie filling
  • 1/2 Cup heavy whipping cream
  • Cinnamon
  • Sour Cream

Preparation

Step 1

Melt butter in skillet and then cook onion until tender, do not brown.
Add garlic in the last few minutes
In a large stockpot place the cooked onion, garlic, chicken stock, salt, pepper and pie filling on low heat for 2 hours.
Just before serving add the cream and allow it to reduce.

Serve warm and top with Sour Cream and Cinnamon.
