Ingredients
- 1 cup bran cereal
- 2/3 cup milk
- 1/4 cup Butter, melted
- 1/3 cup firmly packed brown sugar
- 2 tablespoons honey
- 2 medium (1 cup) almost ripe bananas, Slightly mashed but still chunky
- 2 Eggs, slightly beaten
- 1 tsp vanilla
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Preparation
Step 1
Heat oven to 375°
Put melted butter, brown sugar, honey, and eggs and vanilla in a large bowl and mix together, add bran cereal and mix in until coated. Put bananas in mixture; stir until well mixed. Stir in flour, baking powder, baking soda and salt just until moistened.
Spoon batter evenly into 12 small or 6-8 larger sized paper-lined or greased muffin cups Bake for 20 to 25 minutes or until lightly browned.
