Ingredients

  • 1 stick butter, softened
  • 1 cup sugar
  • 2 eggs
  • Grated rind of one lemon
  • 1/2 tsp. Vanilla
  • 1/2 tsp. Lemon extract
  • 1 1/2 cups sifted all purpose flour
  • 1 tsp. Baking powder
  • 1/4 tsp. Salt
  • 1/2 cup milk

Preparation

Step 1

Cream together shortening & sugar. Add egg, lemon rind, vanilla and lemon extract. Mix well. Sift flour, baking powder and salt. Add alternately with milk to lemon mixture. Spread batter in a well greased & floured pan. Bake @350 for 45 minutes. Glaze with juice of 1 lemon mixed with ½ cup powdered sugar.
