Country Dijon Beef Stew

Ingredients

  • 1 tbsp. unsalted butter
  • 1 sm. onion,chopped
  • 8 oz.(about 2 cups) mushrooms quartered
  • 2 lbs. boneless beef chuck,trimmed and cut into 1 inch chunks
  • 4 tbsp. all-purpose flour
  • 1 can beef broth
  • 2 tbsp. olive oil
  • 1 tbsp. worcestershire sauce
  • 1 tbsp. country-style grainy Dijon mustard
  • 3 carrots,peeled and cut into 1/2 inch coins
  • 1 tsp. chopped rosemary
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

Heat butter in a lg. pot over med. heat.
Add onin and mushrooms and cook 5 mins.
Transfer to bowl.

Meanwhile,toss beef with 3 tbsp. flour.
Add 1 tbsp. oil to the pot and increase heat to me.-high.
Add half the beef and cook 2 mins,browning on all sides.
Transfer to bowlwith onions and mushrooms.
Add remaining oil and second half of beef to pot.
Cook 2 mins.,browning on all sides.
Transfer to bowl;reduce heat to medium.

Add 3/4 c. beef broth to pot.
Whisk in worcestershire sauce and mustard,scraping up any brown bits on bottom of pan.
Add mixture from bowl back to the pot along with the remaining beef broth.
Cover and simmer for 15 mins.

Uncover and stir in carrots. Cover and cook an additional 45 mins.

In a sm. bowl,stir together 2 tbsps. water,the remaining flour,rosemary,salt and pepper.
Stir into stew and cook 3 mins. until thickened.
