Thyme and Potato Pancakes

Ingredients

  • 1 1/2 pd uncooked potatoes grated and well drained
  • 1 small uncooked onion grated
  • 4 medium scallions chopped
  • 6 T flour
  • 1 t thyme fresh if you have it
  • 1 large egg
  • 1 t kosher salt plus additional for garnish
  • 1/8 t black pepper
  • cooking spray

Preparation

Step 1

Preheat oven to 400
line baking sheets with parchment paper
line a strainer with paper towels and place potatoes and onions in strainer and press out any water in them
combine potatoes onions scallions flour thyme egg and pepper in large bowl and toss gently to combine.
scoop potato mixture into your hands using a 1/4 c measure-press each into a round pancake about 3 inches in diameter and 1/4 in thick
place pancakes on prepared pan and coat pancakes with cooking spray
bake pancakes 10 mins-remove from oven and flip-coat with cooking spray and rotate pans in oven-bake 10 more mins and rotate pans again-bake until well browned about 10 mins more-remove to serving platter-sprinkle with additional salt if desired.
