Pork Sausage - Basic with Variations

Basic recipe for pork sausage using any ground pork. You can use that as is or add other ingreatiadd a few more spices and other ingredient. It can be formed in any way needed. Try adding other ingredients to meet you needs. Ingredients such as rice, liquid smoke, cheese, asian spices, potatoes, etc. If you are putting in casings, add a couple of tablesoons of liquid such as wine, water, beer, etc. to better enable it to be injected. Be creative to meet you needs. Enjoy!

Ingredients

  • Basic:
  • 2 pounds ground pork
  • 1 tsp. dried sage
  • 1 1/2 tsp. salt
  • 1 tsp. ground black pepper
  • 1/2 tsp. brown sugar
  • 1/8 tsp crushed red pepper flakes
  • Breakfast Sausage (Add the following to basic):
  • 1 1/2 tsp. sage
  • 1/2 tsp. summer savory
  • 1/4 tsp. dried marjoram
  • 1/2 tsp. salt
  • 1/2 tsp. coarse ground pepper
  • 2 tsp. brown sugar
  • 1/2 tsp. onion powder
  • 2 tsp. fresh chopped parsley
  • 1 pinch ground cloves
  • 1 pinch allspice
  • 1 pinch ground cayenne
  • optional
  • 1/2 tsp. crushed red pepper
  • Sweet Italian Style (Add the following to the basic):
  • 1 1/2 tsp. salt
  • 1/4 tsp ground pepper
  • 2 tbls. minced garlic
  • 1 tbls. dried basil
  • 1 tsp. crushed red pepper flakes
  • 1/2 tbls. dried parsley
  • 1 tsp. ground fennel seed
  • 1 tbls. red wine vinegar
  • 1 tbls. white sugar
  • 1 tbls. paprika
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1 tablespoon garlic powder 1 tablespoon onion powder
  • Cajun Style (Add the following to basic):
  • 1 tsp. salt
  • 1 1/4 teaspoons ground thyme
  • 2 tbls. minced garlic
  • 1 tbls. minced onion
  • 1 tbls. coarse ground pepper
  • 2 tbls. crushed red pepper flakes
  • 1 tsp. white sugar

Step 1

In a small, bowl, combine the sage, salt, ground black pepper, brown sugar, crushed red pepper. Mix well.

Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form as desired.
