Mashed Parsley Potatoes
- 1 lb. unpeeled round red potatoes (small to medium size)
- 2 Tbl. water
- 1/4 cup fat free milk
- 1 1/2 Tbl. reduced calorie margarine
- 1 Tbl. chopped fresh parsley
- 1/2 tsp. seasoned salt
- 1/8 tsp. ground pepper
Cut potatoes into quarters; place potato and water in a medium-size microwave-safe bowl. Cover tightly with heavy-duty plastic wrap; fold back a small edge of wrap to allow steam to escape. Microwave at HIGH 9 minutes or until tender, stirring after 4 minutes.
Drain potato; return to bowl. Add milk and remaining ingredients. Mash potato masher or fork until potato is mashed and mixture is combined. Yield 4 servings. Serve with meat loaf and steamed green beans.
