Ingredients
- Chicken Salad:
- 3 1/4 cups shredded cooked chicken (from 2 boneless, skinless chicken breasts)
- 2 celery stalks, finely chopped
- 1 large shallot, finely chopped
- 1 avocado, diced small
- 3/4 cup Avocado Dressing
- coarse salt and ground pepper
- 4 slices sourdough bread, toasted
- Avocado Dressing:
- 2 avocados
- 1 cup buttermilk
- 1 scallion, white and light-greenparts only, thinly sliced
- 1/4 cup packed fresh mint leaves
- 1/4 cup packed fresh parsley leaves
- 3 tablespoons fresh lemon juice
- 1/2 cup water
- coarse salt and ground pepper

Step 1
Avocado Dressing:
1) Combine avocados, buttermilk, scallion, parsley leaves, mint, lemon juice and water in fool processor.
2) Pulse until smooth.
Chicken Salad:
1) In a medium bowl, combine chhicken, celery, shallot, avocado and dressing.
2) Season with salt and pepper and toss to combine.
