Ingredients

  • Chicken Salad:
  • 3 1/4 cups shredded cooked chicken (from 2 boneless, skinless chicken breasts)
  • 2 celery stalks, finely chopped
  • 1 large shallot, finely chopped
  • 1 avocado, diced small
  • 3/4 cup Avocado Dressing
  • coarse salt and ground pepper
  • 4 slices sourdough bread, toasted
  • Avocado Dressing:
  • 2 avocados
  • 1 cup buttermilk
  • 1 scallion, white and light-greenparts only, thinly sliced
  • 1/4 cup packed fresh mint leaves
  • 1/4 cup packed fresh parsley leaves
  • 3 tablespoons fresh lemon juice
  • 1/2 cup water
  • coarse salt and ground pepper

Preparation

Step 1

Avocado Dressing:
1) Combine avocados, buttermilk, scallion, parsley leaves, mint, lemon juice and water in fool processor.

2) Pulse until smooth.


Chicken Salad:
1) In a medium bowl, combine chhicken, celery, shallot, avocado and dressing.

2) Season with salt and pepper and toss to combine.
