Jicama, Grapefruit and Avacado Salad

Ingredients
- 2 ripe grapefruits
- Juice of 1 lime
- 3 tbsp sweet Thai Chili sauce
- 1/2 tbsp rice vinegar
- 4 tbsp cottonseed oil
- 1 tsp finely chopped jalapeno pepper
- 1/4 tsp cumin
- salt and pepper to tase
- 1 medium jicama, peeled, quarted and cut into 3" slices
- 1/4 of a red bell pepper, cut into thin slivers
- 1/4 of a yellow bell pepper cut into thin slivers
- 1/4 of a red onion thinley sliced
- 1 ripe avacado

Step 1
For the dressing, squeeze juice from 1 grapefruite into a mixing bowl. Combine with lime juice, chili sauce, vinegar, oil, jalapeno, cumin, salt and pepper. Whisk ingredients together.
For the salad, peel the remaining grapefruite, separate the segments and set aside. In a large mixing bowl, toss the jicama, red bell pepper, yellow bell pepper and onion.
Pour dressing over salad; mix well. Just before serving dice avacado. Mix in avocado and grapefruite segments.
