Red Lentil Soup

Ingredients

  • 1 tbsp. olive oil
  • 2 medium onions, chopped
  • 2 carrots, chopped
  • 1 clove garlic
  • 1 tsp. paprika
  • 1 cup red lentils, rinsed and drained
  • 5 cups chicken stock
  • 2 tbsp. tomato paste
  • 1/4 cup water
  • 1 tsp. dried mint

Preparation

Step 1

In a large pot heat olive oil over medium heat. Cook onions, carrots and garlic 3 mins. or until onion is transparent. Stir in paprika and lentils then add stock. Mix tomato paste in 1/4 cup water and stir into soup. Bring to a boil, skim off any foam and simmer covered, 20-30 mins or until lentils and vegetables are soft. Puree in blender. Stir in mint, season and reheat.
