Red Velvet Cake #4

Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 tablespoons cocoa
  • 2 ounces red food coloring (or 1/4 cup)
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 1 tablespoon vinegar
  • 1 teaspoon soda
  • 2 1/4 cups all-purpose flour

Preparation

Step 1

Cream shortening and sugar till fluffy. Add eggs. Beat 1 minute. Put cocoa and food coloring in a cup and make a paste. Add to shortening and sugar mixture. Add salt. Put vanilla in buttermilk and add slowly, alternating with flour. Put vinegar and soda in a cup and mix. Blend, but don't beat, into rest of mixture.

Bake in two 9-inch pans at 350 degrees for 25 to 30 minutes.
Cool on racks for 5 minutes.

*Frosting:*

1/2 cup Crisco
1/2 cup margarine, softened
1 cup granulated sugar
3 tablespoons flour
1/2 cup milk
1 1/2 teaspoons vanilla

Put all ingredients in large bowl. Beat on low speed one minute; then beat on high speed for 12 minutes.
Enough for 2 layers.
