Crunch Sweet Potato Balls

Ingredients
- 1 1/2 cups mashed sweet potatoes (2 to 3 medium)
- 2 tablespoons brown sugar
- 2 tablespoons margarine, melted
- 6 large marshmallows
- 3 cups Corn Chex cereal, crushed to 1 1/4 cups
- 2 egg whites, slightly beaten

Preparation
Step 1
Preheat oven 375o. Grease baking sheet. In a medium bowl combine sweet potatoes, sugar and margarine. Shape approximately 1/4 cup potato mixture around a marshmallow to form a ball. In separate shallow bowls place cereal and egg whites. Roll ball in cereal, egg whites and again in cereal. Place on prepared baking sheet. Bake 15 minutes or until lightly browned.
