Ingredients
- 3 cups fresh seasonal local fruit, such as mango, lychee, or star fruit, diced
- 4 eggs
- 1/2 cup plus 2 tablespoons sugar
- 1 cup whole milk
- 1/2 to 1 tablespoon almond extract, to taste
- 1 teaspoon vanilla
- 3/4 cup flour
- 1/8 teaspoon salt
- 1/4 cup sliced almonds, reserve 1 tablespoon
- 2 tablespoons powdered sugar
Preparation
Step 1
Preheat oven to 350˚ F. Spray 2-quart glass baking dish with non-stick cooking spray. Arrange fruit in a single layer in prepared pan.
In a blender or large bowl, mix eggs, and 1/2 cup sugar, milk, vanilla, almond extract, flour, and salt until smooth. Pour mixture over fruit. Evenly sprinkle with almonds and remaining 2 tablespoons sugar.
Bake in oven for 45-60 minutes or until golden brown and set. Halfway through baking, sprinkle reserved almonds on top. Cool slightly and lightly dust with powdered sugar. Serve warm or at room temperature.
