Cakes: Helen Wells Chocolate Cake

Ingredients

  • 1/2 cup shortening
  • 1 stick butter
  • 1 cup water
  • 6 T cocoa
  • 2 cups flour
  • 2 cups sugar
  • 2 medium eggs
  • 1/2 cup buttermilk
  • 1 t soda
  • 1 t vanilla
  • Icing
  • 4 T cocoa
  • 1 stick butter
  • 4 T milk
  • 1 box 4x sugar
  • Chocolate Cake (Sally's handwriting)
  • 1/4 cup Crisco
  • 2 cups sugar
  • 1 t vanilla
  • 2 medium eggs
  • 1/2 cup sour cream
  • Dash salt
  • 2 cups sifted flour
  • 3 T cocoa
  • 1 rounded t baking soda
  • 1 cup boiling water
  • Icing
  • 3/4 cup 4x sugar
  • 2 T butter
  • 2 T coffee (brewed but cold)
  • 2 1/2 T cocoa

Preparation

Step 1

Melt shortening and butter together with cocoa and water. Bring to a boil.
Dissolve soda in buttermilk.
Stir flour and sugar together. Add cocoa mixture.
Stir in milk/soda, eggs and vanilla.
Mix well but don't beat.
Bake in 9" X 13" pan.

Icing
Melt margarine with cocoa and milk. Beat in sugar. Spread on warm cake.
Can add pecans to icing or decorate top of cake with them.

Bake at 400 degrees for 20-25 minutes.

Chocolate Cake (Sally's handwriting)

Cream Crisco and sugar. Mix next 4 ingredients.
Sift flour and mix with cocoa and soda and add to mixture. Add water.

Bake at 375 degrees for 25 minutes.
