Vegan Toasted Almond Arugula Winter Pesto

A thick yummy paste of arugula, toasted almond oil, and more. A perfect topping for pasta or to put in soups or stews.

Ingredients

  • 2 cups arugula, loosely packed
  • 1 to 2 tablespoons toasted almond oil (or substitute olive oil)
  • 1/2 cup toasted slivered almonds
  • 1/4 nutritional yeast
  • 1/2 to 1 teaspoon fume del sel (or substitute plain salt)

Preparation

Step 1

Blend everything together in a food processor until it is not quite smooth.

Add to pastas, soups, sandwiches or any other place you need a little sunshine.
