Ingredients
- 3 tbsp. butter
- 3 tbsp. flour
- 1 cup milk
- 1 tsp salt
- 1/2 tsp. dry mustard
- pinch cayenne
- 1 cup cheddar cheese
- 4 eggs, separated
- pepper to taste
Preparation
Step 1
Preheat oven to 325F. Melt butter. Add flour, stirring constantly, cook for 2 mins. Add milk, slowly, stirring constantly. Add seasonings and stir. Cook until thickened. Add cheese; stir until melted. Remove from heat. Set aside to cool.
Beat yolks until thick and pale yellow. Stir into cooled cheese sauce. In a large bowl, beat egg whites until stiff but not dry. Fold in carefully, do not overmix and deflate. Pour into 2 qt souffle dish. With tip of spoon, make a track 1” from edge aroung pan. Bake for 1 hour until souffle has risen and top is light golden brown. serve immediatelely.
