Spicy Mexican Rice

Ingredients

  • 1 Chopped onion
  • 2 T vegetable oil
  • 1 cup white rice
  • 1 chopped plum tomato
  • 2 t tomato paste
  • 1/2 t each kosher salt and cumin
  • 1 whole jalapeño

Preparation

Step 1

Saute onion in oil in a saucepan over medium heat. Stir in rice and toast for 3 min.
Add 1 2/3 water and other ingredients, bring to a boil. Cover and simmer 20 min.
Remove from heat and let sit 5 min. discard Jalapeño. Top with cilantro and serve.
