- Ingredients:
- 3/4 cup pine nuts
- 1/3 cup olive oil
- 6 cloves garlic, minced
- 1/2 teaspoon dried crushed red pepper
- 3/4 pound angel hair pasta
- 3 pounds fresh spinach, washed & stemmed
- 3 tablespoons butter
- 1/2 cup grated Parmesan cheese
- 1/8 teaspoon salt
- 1/8 teaspoon pepper

PREPARATION:
Saute pine nuts in olive oil until golden. Remove nuts and set aside. In same oil, saute garlic and red pepper for 3 minutes; set aside. Cook pasta per pkg directions until tender and drain.
Reheat oil containing garlic and pepper; add spinach and saute until wilted (about 3 minutes.) Stir in butter. In large bowl, toss pasta, spinach, pine nuts and cheese. Add salt and pepper and serve.
