Ingredients
- For the glaze:
- 5 pounds chicken wings
- salt and fresh ground black pepper to taste
- 3 tbsp Frank's hot sauce
- 2 tbsp veg oil
- flour
- 3 crushed garlic cloves
- 2 tbsp grated ginger
- 1 tbsp Sambal chili sauce (or 1/2 tsp hot pepper flakes)
- 1/2 cup rice vinegar
- 1/2 cup packed brown sugar
- 1 tsp soy sauce
Preparation
Step 1
1. Section the chicken wings with a knife into 3 pieces.
2. Throw away the tips or use to make soup.
3. Sprinkle with the salt and pepper and add the hot sauce.
4. Add the 2T. of veg. oil and toss.
5. Put a little flour (about a cup) into a kitchen size garbage bag. Add the chicken wings and shake until well coated.
6. Spread the chicken wings on a baking sheet covered with foil and sprayed with oil (Pam). Give the wings on the pan another coat of the spray.
7. Bake in a hot oven (400 degrees) for 30 mins. Turn and bake another 30 mins.
8. While wings bake the 2nd 30 minutes make the glaze.
9. Mix glaze ingredients and boil for about 5 minutes.
10.Pour half the glaze over wings in a bowl and toss.
11. Pour a little of the remaining sauce over wings and let sit for 5-10 mins.
