Greek Pasta Salad

Penne or bowtie pasta work equally well in this classic recipe, as do whole black olives.

Ingredients

  • 3 c. cooked elbow macaroni
  • 2 c. sliced mushrooms, diced
  • 15 cherry tomtoes
  • 1 cl yellow or red pepper, sliced
  • 1/2 c. green onion, chopped
  • 3/4 c. sliced black olives, drained
  • 1 c. crumbled feta cheese
  • Optional: 3/4 c. pepperoni, diced
  • 1/2 c. olive oil
  • 1/2 c. red wine vinegar
  • 1-1/2 t. garlic powder
  • 1 1/2 t. dried basil
  • 1 1/2 t. dried oregano
  • 3/4 t. pepper
  • 3/4 t. sugar

Preparation

Step 1

In a large bowl, combine macaroni, vegetables, cheese and peperoni, if using; set aside. Whisk together remaining ingredients in a small bowl. Pour over macaroni mixture and toss until evenly coated. Cover and chill 2 hours ot overnight.
