Ingredients
- 1 16-oz. Loaf Ciabatta or Italian Bread
- 1/4 C. Mayonnaise
- 1 Tbsp. Basil Pesto
- 6 oz. Provolone Cheese, thinly sliced
- 4 oz. Coppacola or Cooked Ham, thinly sliced
- 4 oz. Salami, thinly sliced
- 2 C. Fresh Arugula
- Red Onion Relish ( Under Sauces & Dips )
Preparation
Step 1
Prepare red onion relish. Cut bread in half horizontally; brush outside with oil. Place bottom half on a piece of waxed paper, cut side up. Combine mayonnaise & pesto. Set aside. Preheat panini press. To assemble sandwiches, place half of the provolone cheese on the bottom half of the bread loaf. Spread mayonnaise mixture over cheese. Layer with coppacola, salami, red onion relish, arugula & the remaining cheese. Replace top of loaf. Cut loaf crosswise into 4 sandwiches. Place sandwiches ( half at a time, if necessary ) in the panini press; cover & cook about 6 min. or till bread is toasted. Serve.
