Ingredients

  • 1 tsp olive oil
  • 1/2 c chopped onion
  • 1 tsp chopped garlic
  • 2 28oz cans crushed tomatoes
  • 3 cups chicken broth
  • 3/4 cup heavy cream
  • 1/3 cup basil
  • 1/3 cup sugar
  • 2 tsp parsley
  • 1/4 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preparation

Step 1

-Saute onion and garlic in olive oil.
-Add tomatoes and chicken broth and simmer for 20 min.
-Let cool for 30 min.
-Pour cooled soup into blender, blend til smooth.
-Pour back into pot, add cream and remaining ingredients.
-Simmer another 20 min.
