Ingredients

  • 2 live 1 lb lobster or 8 oz fully cooked lobster meat
  • 4 oz shrimp or scollops
  • 1/2 small carrot, diced
  • 1/2 rib of celery, peeled and diced
  • 1/4 small red bell pepper, diced
  • 4 tbsp butter
  • 1 egg white
  • 1/2 bunch chives, chopped
  • 3 tbsp white bread crumbs
  • salt & pepper
  • cayenne peper

Preparation

Step 1

Salte carrot, celery and bell pepper on smallest pot with the butter over low/medium heat for 5-7 minutes. Vegetables should still be crunchy. Cool to room temperature

Puree shrimp/scallops with egg white. Add to vegetables. the chives, diced lobster and bread crumbs. Mix and season to taste. Cover and refrigerate.

Makes one pound
