Ingredients
- 3 lbs rose potatoes or small red potatoes
- 1/2 lb bacon, chopped
- 1 cup chopped red onions
- 6 large hard boiled eggs, chopped
- 1 cup shredded Cheddar cheese
- 1 cup mayonnaise
- 1 cup sour cream
- 1/4 cup chopped chives
- 1/2 cup low fat buttermilk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/8 teaspoon cayenne pepper
Preparation
Step 1
1) Place potatoes in pot and bring to a boil (about 15 - 20 min) until fork tender. Drain and cool
2) In medium skillet over medium heat, add bacon and onions. Saute until bacon is crisp, drain and cool
3) Slice potatoes into 1/4 inch roundS. Combine potatoes with bacon mixture, chopped eggs and shredded cheese and gently toss.
4) In medium bowl, combine mayonnaise, sour cream, buttermilk, chives, salt, pepper and cayenne together. Toss with potato mixture. Cover and refrigerate several hours or overnight. Potatoes will absorb dressing as it sits.
