Chive and Onion Hash Brown Potatoes

Easy to make with purchased hash browns, requires 15 minutes of prep, 45 minutes of baking. Came from taste of home magazine.

Ingredients
- 1 1/2 cups half-and-half cream
- 1 cup of spreadable chive and onion cream cheese
- 2 tbsp. dried minced onion
- 1 tsp salt
- 1/2 tsp pepper
- 2 packages (20 ounces each) refrigerated shredded hash brown potatoes
- 2 cups shredded swiss cheese
- 3 tbsp. minced fresh chives - divided
- 2 tbsp. butter, cubed
Preparation
Step 1
In a small saucepan combine first 5 ingredients. Cook and stir over medium heat until blended, transfer to a large bowl. Add potatoes, mix well. In a greased 13 x 9 inch or 3 quart baking dish, layer a third of the hash brown mixture and 1/3 of the cheese with 1 tbsp of chives. Repeat layers. Top with remaining hash brown mixture and cheese and dot with butter. Cover and bake at 375 degrees for 35 minutes. Uncover, bake 10-20 minutes longer until edges begin to brown. Let stand for 10 minutes before cutting. Sprinkle with remaining chives.
