Broccoli - Roasted

Ingredients

  • 4 – 5 lbs broccoli – rinse & dry thoroughly
  • 4 garlic cloves, thinly sliced
  • 1 tsp kosher salt 1/2 tsp pepper
  • 2 tsp lemon zest
  • 2 tblsp lemon juice
  • 3 tblsp pine nuts, roasted
  • 1/3 c. parmesan cheese
  • 2 tblsp julienned fresh basil leaves (optional)

Preparation

Step 1

Preheat oven to 425 –can cook olive oil until hot

Cut the broccoli into florets with 1 -2 inch stem – about 8 cups

Place florets on pan in a single layer

Toss the garlic on the broccoli & drizzle 5 tblsp oil

Sprinkle w/s&p – Roast 20 – 25 min.

Remove broccoli from oven & toss w/1 ½ tblsp oil, zest, juice & nuts, parmesan & basil – serve hot
