Ingredients

  • Greek Gyro Tzatziki sauce
  • 16 oz. Greek yogurt
  • 1/3 cucumber (peeled)
  • 1/4 chopped onion
  • 3 cloves garlic or 3 Tbs minced garlic
  • 2 Tbs olive oil
  • 1 Tbs lemon juice (or 1/2 fresh squeezed)
  • Salt & Pepper to taste
  • 1 Tbs Dill
  • Meat seasoning
  • 1 lb ground lamb, beef, turkey or 2 pound roast
  • 1/4 cup minced red onion
  • 2 cloves garlic
  • 2 tsp salt
  • 1 tsp pepper
  • 1 1/2 tsp cumin
  • 1 tsp oregano
  • 2 tsp lemon or lime juice
  • Feel free to be creative & mix your favorite herbs
  • Serve with pita bread or small flour tortillias, sliced red onion, fresh sliced cucumber, crumbled feta cheese, lettuce & tomatoe

Preparation

Step 1

For Sauce:
Place yogurt in a colander lined with cheese cloth or coffee filter, cover & allow to drain overnight. This will make the sauce thicker. Omit this step if you prefer runnier sauce. Add remaining ingredients into blender, blend until well combined. Chill in a glass bowl for a minimum of 1 hour or longer.

For Meat:
For Patties: mix GROUND meat all ingredients together. Divide into 4 portions, shaping into oblong patties. Chill for an hour. Grill to desired doneness
For Roast: mix onion, garlic and spices in a glass bowl. Spread over ROAST. Cover and chill overnight. Slow cook to desired doneness.(160 or better) We’ve used our smoker. Cut into ¼ in strips

Assembly:
Warm Pita bread or Small tortillas
Ziki sauce
Meat
Shredded lettuce
Tomatoes
Feta cheese
Chopped red onion
2/3 Fresh cucumber, sliced lengthwise or chopped
Hold closed with a toothpick
