Roasted Potatoes

Ingredients

  • 3 tbsp olive oil
  • 1 1/2 1 1/2 tbsp butter
  • 2 lb small Yukon gold or red potatoes, peeled
  • 1/4 c. lemon juice
  • 4 tsp. chopped fresh thyme
  • 1/4 tsp salt & 1/2 tsp pepper

Preparation

Step 1

Preheat oven to 400 – Cook oil & butter in a skillet over med. Heat- stirring constantly 3 – 4 min. or until butter begins to turn golden brown.

Remove butter mixture from heat & add peeled potatoes, tossing gently to coat.

Spread potatoes in a single layer in a jelly roll pan

Bake at 400 for 40 – 45 min. until potatoes are brown & tender, stirring twice.

Transfer potatoes to a large serving bowl & toss w/ lemon juice, chopped fresh thyme, s&p, until well coated.

Serve immediately
