Lighter Southern Deviled Eggs (Deen bros)

Ingredients
- Paprika Spice Blend:
- 12 large eggs
- 6 tablespoons low-fat mayonnaise {90g}
- 1 1/2 tablespoons sweet pickle relish
- 2 teaspoons Dijon mustard
- 1/4-1/2 teaspoon Paula Deen Paprika Spice Blend
- 1/4 cup paprika
- 2 tablespoons salt
- 2 tablespoons ground cumin
- 2 tablespoons brown sugar
- 2 tablespoons chili powder
- 2 tablespoons fresh ground black pepper
- 1 tablespoon garlic powder
- Chopped pimentos, optional
- Sweet gherkin pickles, optional
Preparation
Step 1
Place eggs in a single layer in a saucepan with enough cold water to cover; bring to a boil over high-heat. Simmer very low 15-20 minutes. Cover and let stand 15-20 minutes. Drain; run under cold running water.
Peel eggs and halve lengthwise. Remove yolks. Press 6 of the yolks through a sieve into a small bowl. Reserve the remaining yolks for another use. Stir in the mayonnaise, relish, mustard and spice blend until well mixed.
Spoon mixture into the egg white halves. Place eggs on a plate, cover loosely with plastic wrap, and chill until ready to serve.
Garnish with the pimientos and serve with the pickles on the side, if using.
