Tilapia with Parsley-Lemon Mayonnaise

Ingredients

  • 1 c. mayonnaise
  • 2 Tbsp. chopped parsley
  • 2 tsp. lemon zest
  • 3 Tbsp. fresh lemon juice
  • 1 tsp. salt, divided
  • 3/4 tsp. ground black pepper, divided
  • 4 tilapia fillets
  • Garnish: grilled lemon slices, chopped fresh parsley

Preparation

Step 1

Combine mayonnaise, parsley, lemon zest, lemon juice, 1/4 tsp. salt, and 1/4 tsp. pepper. Cover and chill for at least 30 minutes, or up to 3 days.

Spray grill rack or pan with nonstick spray. Preheat grill to medium-high heat. Sprinkle both sides of fish with remaining 3/4 tsp. salt and 1/2 tsp. pepper. Lightly spray fish with nonstick cooking spray.

Grill fish, covered with grill lid, for 3 minutes on each side, or until fish flakes easily with fork. Garnish with lemon slices and parsley.
