Banana Nut Bread

A family favourite. This uses up bananas you're on the verge of throwing out. Made without butter or oil. Serve with cream cheese or peanut butter for a quick, nourishing breakfast, snack or on a buffet table.

Ingredients
- 3 ripe bananas
- 2 eggs, beaten until light
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 tsp. salt
- 1 tsp. baking soda
- 1/2 cup chopped nuts

Step 1
Mash bananas and combine with beaten eggs.
Sift flour, sugar, salt & soda together. Stir into banana; add nuts and combine well.
Bake in a greased loaf pan @ 350 for 60 minutes.
