Soup: Paleo Caldo de Pollo

Ingredients

  • 4-6 cups of already cooked shredded chicken and 10 cups of chicken broth.
  • 5 carrots, diced
  • 1 red onion, diced
  • 1 14.5oz can diced tomatoes
  • 1 cup Salsa Verde (I like the Trader Joe’s brand)
  • 1/2 tablespoon garlic powder
  • 1 tablespoon cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/8 teaspoon cayenne pepper
  • Sea salt and black pepper to taste

Preparation

Step 1

Add all ingredients, mix well and simmer forr 30-45 minutes.

Taste and add more seasoning if desired. If you like it spicier kick up the cayenne pepper and cumin!!

Top with diced avocado and cilantro!
