Spanish Rice (Aunt Bertha)

Ingredients

  • 1 lb Bacon, chopped
  • 2 medium onions, chopped
  • 2 bell peppers, chopped
  • 6 stalks celery, chopped
  • 1 large can tomatoes
  • 2 C rice
  • 1 tsp pepper
  • 4 Tbl Worchester Sauce
  • 2-3 buttons garlic
  • 3 or 4 hot peppers

Preparation

Step 1

Cook bacon until well browned or nearly crisp.

Add onions, peppers, celery, garlic, hot peppers, pepper and Worchester Sauce and stir well.

Cover rice with water or broth (1/2 inch of water above rice). Bring to boil. Add vegetable mixture, stir well and cook, stirring constantly for first few minutes. Cover and simmer.
