Barley Mushroom Bake

Ingredients
- 1 cup Pearl Barley (Not Instant)
- 4 T. butter
- 1 large onion, chopped
- 1 cup mushrooms, chopped
- 3 cups beef broth (or can use chicken broth)
- 2 teaspoons salt
- 1/4 teaspoon pepper
- pine nuts (optional)

Preparation
Step 1
Preheat oven to 350 degrees. Stir fry barley in 2 tablespoons of butter about 2 minutes or until lightly browned. Transfer to an ungreased 1 1/2 qt. casserole. Saute onions in remaining 2 tablespoons butter until pale golden. Add mushrooms and saute 3 - 5 minutes. Add to casserole. Mix in remaining ingredients. Cover and bake about 1 1/4 to 1 1/2 hours until barley is tender, stirring now and then. Fluff with a fork and serve.
