Ingredients

    cup rice

  • 2

    cups water

  • 1

    tsp salt

  • 4

    boneless chicken breasts cutlets (1lb)

  • 2

    tbsp brown sugar

  • 2

    tbsp cornstarch

  • 1/2

    cup teriyaki sauce

  • 1/2

    cup orange juice

  • 2

    cloves garlic, minced

  • 11 oz. can mandarin oranges, drained

  • 1

    green onion, sliced

Directions

Combine rice, water and salt in 3-Qt./3L Casserole. Cover and microwave on high power for 5 minutes. While rice is cooking prepare sauce ingredients. After 5 minutes remove cover and invert over rice. Place chicken cutlets and sauce ingredients in cover. Cover with wax paper and microwave at 50% power for an additional 15minutes. Garnish chicken with sliced onions and mandarin oranges. Serve with rice.
