5 Min Corn Chowder - RAW

Ingredients

  • 1.5 cups organic corn (fresh or frozen; corn is not available now so I used frozen)
  • 1 red bell pepper
  • 1 large zucchini
  • 2 stalks celery (I will omit these next time)
  • 1 heaping tsp garlic powder
  • 1 heaping tsp onion powder
  • a dash of cayenne
  • a dash of nutmeg
  • sea salt and fresh cracked pepper to taste
  • 1/2 cup water
  • avocado, cherry tomatoes, a little extra corn and cilantro as garnish

Step 1

In your Vitamix add corn, water, red bell pepper, zucchini, salt, pepper, nutmeg, cayenne, onion and garlic powder and blend on high until creamy. If you do not have a high speed blender like the VitaMix you may want to use a food processor instead, however, the consistency will be kind of chunky when using a food processor. Another option is to heat all ingredients in a pot on the stove, then use an immersion blender to blend. It’s not as fast and will no longer be raw but it’s still a super healthy option for those of you who don’t have a VitaMix

If you are using a VitaMix, simply blend until creamy. The longer you blend, the warmer your soup will be. Taste and adjust seasonings to your liking then garnish with fresh avocado slices, cherry tomatoes, corn kernels and cilantro! Et voila, in less than 5 minuets your delicious soup is done!!
