Ingredients
- 6 large egg whites
- 3 large eggs
- 1 medium onion, chopped
- 1 large tomato, beefsteak, seeded and chopped
- 1/4 cup basil, chopped
- 1/8 teaspoon salt, or to taste
- 1/8 teaspoon black pepper, or to taste
- 6 slices high fiber bread, toated and cut diagonally into 4 pieces each
Preparation
Step 1
With a fork, lightly beat egg whites and eggs.
In a large skillet coated with cooking spray, saute onion over medium heat, stirring frequently, until it starts to turn golden, about 5 minutes. Add tomatoes and cook one more minute.
Add eggs and scramble until cooked, about 2 minutes. Add half the basil and season with salt and pepper.
Top toast with egg mixture and sprinkle each with remaining basil. Serve immediately.
