Ingredients
- 6 ounces cream cheese
- 1/2 cup vermont extra sharp white cheddar cheese , grated
- 3/4 cup sharp cheddar cheese , grated
- 1 cup monterey jack cheese , grated
- 1/4 cup mayonnaise or1/4 cup plain Greek-style yogurt (add more if needed)
- 1 teaspoon red wine vinegar
- 4 ounces pimientos , chopped
- tablespoons chopped fresh chives
- 1/2 red pepper, finely chopped
- 1/2 jalapeno pepper, seeded and finely chopped or 1 dash hot sauce (or more!)
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- fresh ground black pepper , to taste

Directions:
1Using a hand held mixer, beat cream cheese until soft.2Add the remaining ingredients and beat until creamy and combined.3Cover and refrigerate for about an hour.
