Cream of Broccoli Soup

Ingredients

  • 6 cups chicken broth
  • 3 cups chopped potatoes
  • 1 bunch green onions chopped, reserve tops for garnish
  • 2 packages frozen broccoli
  • 1 Tbsp salt
  • dash of red pepper
  • 1 cup whipping cream
  • sour cream

Preparation

Step 1

Bring stock to boil. Add potatoes, onions, broccoli, salt and pepper. Bring back to boil and cook until tender (8-10 mins)
Remove from heat. Fill blender 1/2 full and puree. Return to pot. Stir in whipping cream and heat until right before boiling. Remove from heat. Serve and garnish with a dollop of sour cream and green onion tops.
