Sweet Potato Souffle

sometimes a good substitute at Christmas :)

Ingredients

• Topping:
• 2 c mashed sweet potatoes
• 1 c sugar
• 2 eggs, beaten
• 3/4 melted butter
• 1 c milk - use 1/2 c if canned sweet potatoes used
• 1/2 t nutmeg and cinnamon
• 3/4 c crushed corn flakes
• 1/2 c brown sugar
• 1/2 c nuts
• 3/4 stick butter melted

Cooking time 40mins

Preparation

Step 1

Mix all ingredients well. Pour into well greased casserole dish. Bake 400 degrees for 20 minutes.

Topping:
Mix ingredients and spread over baked casserole. Return to oven for additional 10 minutes at 400 degrees.
