Ingredients

  • 1 cup dried mushrooms ground up to powder
  • 1 tbsp montreal steak spice or kosher salt to taste
  • 2 tbsps garlic powder
  • 1 tsp curry powder
  • 1 tbsp dried onion

Preparation

Step 1

Coat roast with olive oil and then rub mixture into roast.
Put in a roast pan to which 4 cups beef stock, 2 celery stalks, 2 cut up carrots, and one thickly sliced onion has been added. Put roast on top of vegetable mixture and roast uncovered @350 until desired tenderness. Serve with pan au jus which has been skimmed of fat. Save rest of au jus to make a pot of beef barley soup next day.
