Orzo and Arugula Pasta

  • Orzo
  • Arugula
  • Onion, chopped
  • Tomatoes (2), chopped
  • Pine Nuts
  • Olive Oil, 1 tbsp.
  • Scallions
  • grated Parmesan cheese

Preparation

Step 1

Boil water and cook orzo. Drain and set aside.

Heat olive oil in deep pan. Add pine nuts and brown. Slice scallions and chop onions. Add to pan and saute. After onions become translucent and add tomatoes. Saute for one minute and add arugula.

Add cooked orzo to pan. Salt and pepper. Add grated Parmesan cheese.
