Kirby Cucumber Salad

The unwaxed skin of kirby cucumbers doesn’t need to be peeled. If you can’t find them, buy regular cucumbers and remove half the peel in strips, creating stripes.

- 4 pounds kirby cucumbers, not peeled, thinly sliced
- 1 tablespoon salt
- 3 ⁄4 cup distilled white vinegar
- 2 tablespoons sugar
- 2 tablespoons chopped fresh dill

Step 1
In colander set over large bowl, toss cucumbers and salt; let stand 30 minutes at room temperature. Discard liquid in bowl. Pat cucumbers dry with paper towels.
In same clean bowl, combine vinegar, sugar, and dill. Add cucumbers and toss to coat. Cover and refrigerate, stirring occasionally, at least 1 hour to blend flavors or up to 4 hours.
