Ingredients
- 6 tbsp butter
- 3 tbsp flour
- 2 cups milk
- 1 cup graded Cheddar cheese
- 1 lb crab-meat
- 1/4 cup whipping cream
- Salt, pepper and paprika
- 1/4 cup dry sherry
- Freshly squeezed lemon juice
- Dash Tabasco sauce
Preparation
Step 1
Melt 4 tbsp butter in top of double boiler. Blend in flour; gradually add milk, stirring constantly until thick and smooth. Cook about 5 minutes. Remove from heat and add cheddar; stir until melted. Add crab-meat. Over low heat, stir in cream and 2 tbsp butter. Add seasonings and Tabasco. Add sherry and lemon juice. Serve in chafing dish with crackers and fresh vegetables.
