Tomato and Crab Soup

Ingredients
- 2 Tbsp olive oil
- 5 scallions, thinly sliced
- Red pepper flakes
- 2-1/2 lb. tomatoes chopped (about 3 cups)
- 2-1/2 cups chicken or vegetable stock
- Heavy cream
- Old Bay seasoning to taste
- 1 Tbsp. lime juice
- Salt
- 1/2 lb. fresh crabmeat
- Omit the crab for tomato soup

Preparation
Step 1
Heat oil and add scallions until softened. Add tomatoes and cook until soft (5-6 minutes). Stir in chicken stock and heavy cream and bring to a boil. Reduce heat and simmer about 15 minutes.
Puree soup in a blender until smooth. Stir in lime juice. Season to taste with lime juice (or lemon), red pepper flakes and old bay. Add crab and simmer.
