Celebration Carrot Cake

- Frosting:
- 2 Cups Vegetable Oil
- 5 Eggs
- 2 2/3 Cups Sugar
- 1/3 Cup Raisins
- 2 2/3 Cups Grated Carrots
- 1 Cup Chopped Nuts
- 1 1/3 Cups Crushed Pineapple, drained
- 2/3 Cup Coconut
- 3 1/2 Cups Flour
- 4 tsp. Baking Soda
- 2 (8 oz.) Cream Cheese
- 1 Cup Butter
- 2 lb. Powdered Sugar
- 2 tsp. Vanilla

Step 1
In a large bowl, combine oil, eggs, sugar, raisins, carrots, walnuts, pineapple, and coconut. In a separate bowl, sift flour, baking soda, baking powder, cinnamon and salt. Add dry ingredients to the wet ingredients a little at a time. Divide the batter into 2 (10") round, greased cake pans. Bake at 350 degrees for 35 minutes. Cool cake in pans for 25 minutes. Take out of pans and cool completely on a wire rack. Once cool, cut each cake into 2 layers and assemble and frost on a cake plate, one layer at a time. Icing: Beat cream cheese and butter. Gradually add sugar and beat until fluffy; add vanilla. This makes a tall, beautiful cake. Since the layers are thick, thin slices are substantial.
