Quick Italian Vegetable Soup 0 Picture


  • 3 T olive oil
  • 3 onions, coarsely chopped
  • 2 garlic cloves, finely chopped
  • 2 carrots sliced into 1/4" pieces
  • 1 green pepper, coarsely chopped
  • 2 t dried basil
  • 1 t dried oregano
  • 46 oz chicken broth
  • 28 oz whole tomatoes, undrained and finely quartered
  • 19 oz chick peas, drained
  • 1 cup uncooked pasta
  • parm for garnish

Step 1

Heat oil in a heavy bottomed soup pot. Add onion and garlic saute for 4 to 5 minutes or until onion is transparent. Add carrots, green pepper, basil and oregano and continue sauteing until onion starts to turn golden brown. Add chicken broth, tomatoes and chick peas. Cook over medium heat for 15 minutes. Add pasta and simmer until pasta is tender. Add parmesan cheese.
