Frog's Eye Salad
- 1 1/3 cups Acini di pepe, uncooked
- 1 20 oz ca pineapple chunks, in juice, reserve 1/4 cup juice
- 1 3/4 cups milk
- 1 1/4 cups sugar
- 1 package vanilla instant pudding (3-4oz)
- 1 can crushed pineapple, drained
- 2 cans mandarin oranges (11 oz each), drained
- 2 cups Cool Whip
- 3 cups miniature marshmallows
- 1/2 cup flaked coconut
- May add maraschino cherries or sliced bananas
Cook pasta 11 min. and rinse with cold water; drain well.
In large bowl, beat reserved pineapple juice, milk, sugar and pudding for 2 min.
Gently stir in pasta and remaining ingredients, cover.
Refrigerate prior to serving.
