  • 1 tbsp oil
  • 1 1/4 lb boneless,skinless chicken breasts, cut into 1 inch pieces
  • 1 bag frozen broccoli,redpeppers, onions and mushrooms
  • 1 can black beans
  • 1 cup salsa
  • 1 flour tortilla- 8 inch - cut into 2x1 inch strips
  • 1 cups shredded cheese - cheddar

Preparation

Step 1

in a 10 inch skillet, heat oil over medium heat. cook chicken in oil 3 - 4 minutes, stirring occasionally, until no longer pick in center.
stir in veggies, beans, salsa; reduce heat to mediu,. cover and cook 6- 8 minutes, stirring occasionally, until veggies are crisp tender.
sprinkle with tortilla strips and cheese. cover and cook 2 minutes or until cheese is melted.
